Cheese Mini Cupcakes
This is a great recipe for Potlucks, Kettlefests, Pitch-in dinners or whatever they are called in your area.
Preheat oven to 350°
5 pkgs Cream Cheese or Fat Free Cream Cheese
5 whole eggs or 1¼ cups Egg Substitute
1¼ granulated sugar or Splenda
Soften cream cheese at room temperature cream until softer add eggs one at a time beating in between. (Egg Substitute ¼ cup at a time) beat until smooth and creamy. Add sugar (Splenda) slowly blending in as you add.
Having prepared your mini cupcake tray in advance with paper liners, spoon into liners. Bake at 350° 30 minutes. As they cool they will sink down in the middle and you can add a cherry or other filling to the indentation.
