Easy "Cheesecake"

this recipe is so easy even Sir Anthony could do it!!!  So, Jerry, Etta is going to be expecting you to treat her in a day or two, okay?

Basic Easy Cheesecake Recipe

8 oz. cream cheese
8 oz. Cool Whip
1/4 cup sugar

Blend the cream cheese and sugar together till smooth, then add the whip cream.  Pour into a graham cracker crust (buy one already made or make it yourself!).  Chill.  Top with kiwi, strawberries, or other fruit and serve.


Variations

Strawberry

Add between 1/2 and 3/4 of a box of strawberry Jello gelatin powder to the cream cheese and sugar.  Mix.  Add whipped cream.  Pour into shell.  Chill.  Top with fruit.  Serve


Chocolate Chip Mint

Add about 1/2 tsp (more or less to taste) mint extract to cream cheese and sugar.  Add green food coloring. Blend.  Add whipped cream. Add more food coloring until you get desired shade. Set aside about 1 to 1.5 cups of the stuff.  With the remaining "stuff" stir in about 1/4 cup miniature chocolate chips.  Pour into pie crust.  Cover with set aside "stuff."  (This keeps it from looking like you have little black things in a green pie!!!  :-\)  Chill.  Top with mint chocolate candies.  Serve.


I would also think blue jello instead of strawberry, topped with blue things would be cool too.  And it may be possible to add lime instead of mint and food coloring and get sort of a key lime pie thing.  I plan on trying some of these later.  I made the strawberry and mint one this morning, so I may take a picture just before serving, so you can see! 8)

Oh yea, I think this would make a neat fruit dip too, if you could thin it up a wee bit! :P :-*

really, you should try it.  the strawberry one is really good.  (And I hate strawberries!)  Sorry i didn't get a picture.  We ate them before I could!
