Oreo Cheescake

This recipe is from  Shortcut Suppers book. This recipe is soooo good.

Oreo Cheesecake

1 (20-oz) pkg. Oreo Chocolate Sandwich Cookies
1/3 cup margerine, melted
3 (8 oz) pkgs cream cheese, softened
3/4 cup sugar
4 eggs, at room temperature
1 cup dairy sour cream
1 teas. vanilla
  Whipped cream for garnish

Preheat oven to 350 F. Finely roll 30 cookies; coarsley chop 20 cookies. In a medium bowl, combine finely rolled cookie crumbs and margarine.  Press on bottom and 2 inches up side of 9-inch springform pan; set aside.

In large bowl with electric mixer at meduim speed, beat cream cheese and sugar until creamy. Blend in eggs, sour cream and vanilla; fold in chopped cookies.  spread mixture into prepared crust. Bake at 350 F, 60 minutes or until set.

Cool on wire rack at room temperature.  Chill at leat 4 hours. Halve remaining cookies; remove side of pan. To serve, garnish with whipped cream and cookie halves.

I have eaten this in restaurants but never baked one.  This sounds heavenly!
