Pumpkin Roll
3/4 C flour
1 C sugar
2/3 C pumpkin
1tsp baking soda
1/2 tsp cinnamon
1/2 c walnuts (optional)
3 eggs mixed by hand for 5 minutes
Filling
8 oz. cream cheese
2 tbls. butter
3/4 tsp. vanilla
1 C powdered sugar.
Bake at 350 F for 20-25 min.
1 Cookie sheet sprayed with pan coating spray, lay waxed paper on cookie sheet and spray again, spread mixture. When done cool 10 minutes then spread filling and roll like you would a jelly roll . Pulling the waxed paper makes it easier to roll.
