Title: Yummy Pudding
Post by: Janice on April 09, 2003, 02:23:42 AM
A new friend at church gave me this recipe ('cuz I asked for it! she had brought it to a Senior luncheon and I really liked it).....She didn't give it a name, so I did.  She said the original recipe called for baking the crumb mixture longer than this, but she thought this was plenty of time.  Just keep stirring and checking it.  It could overcook if you are not careful.

Yummy Pudding

Crumbs:
1 cup self-rising flour
  cut in 1 stick butter
Add
1/4 cup brown sugar
1 small can coconut
1 pkg. shaved almonds (2 oz, or 2/3 cup)

Combine and spread on cookie sheet.
Bake at 350* for 20-25 min? stirring often, like every 3 - 4 min.
Remove when golden.  Cool.

Pudding:
Combine 2 2/3 cups milk
2 small pkg vanilla instant pudding
Fold in 12 oz. thawed Cool Whip

Layer in large glass dessert dish with the cooled crumbs, making 3 or 4 layers of each.  Refrigerate.
