Title: Grilled Vegetables Pizza

Grilled Vegetable Pizza

1 teas. salt
2 cups (1/4 inch) zucchini slices
10 (1/4 inch) eggplant slices
2 Tbls. Olive Oil
1 (12 inch) Boboli brand Italian Bread Shell
1 cup shredded low moisture part-skim
  Mozzarella Cheese divided
1/4 cup (1/4 inch) roasted red pepper slices
1 Tbls. Coarsley chopped fresh Basil leaves

Preheat grill. Lightly salt zuchinni and eggplant . Brush with oil.  Grill on both sides until tender. Sprinkle Boboli Italian bread with 1/2 cheese.  Top with grilled vegetables, roasted red peppers, basil and remaining 1/2 cup cheese.  Place bread shell on grill 5 inches from coals.  cover and grill for 3-4 minutes or until cheese is melted. Makes 4-6 servings.
Other suggested additions. Grilled Sliced red onions, Olives, tomato slices, Green Bell pepper rings.

Marilyn, you and I are going to have to stop meeting like this!  I love these recipes you're posting!  I'm trying to lose weight!!!   :o

Marilyn, is there something other than the eggplant that you could use for this pizza.  My kids love pizza, but don't care for eggplant.  I am not very fond of it either, but thought I would try them with it.  Perhaps it was the way I prepared it.

Any thoughts?

Actually Heather you can use any vegetables you like on this pizza. Maybe grilled avacado slices, sounds good to me, I happen to love avacados.

I never liked eggplant until I drained them well before cooking after dredging them with salt and letting the juice drip down into a pan.  I make Moussaka with eggplant and simply love it.

I'll have to look up the recipe and post it.

I have some eggplant plants for the garden!

I've tried another variation of this recipe, via my sister in law who got it through Taste Of Home Diet version of recipes.

I like these grilled Pizza's & we have them in the summer time.  We like to alter things to suit our diet if possible.

I hope to make some real nice diet sign's for your's & my website Pat, in support of those who are trying too loose weight.

Heather:  Marilyn is right, you can use various kinds of Vegitables to suit your likes & need's!!

have to try this --getting the grill fired up for the upcoming holiday
