Title: Spanish Rice

Spanish Rice

1 cup long grain rice
1 fresh tomatoes diced
1 small brown onion diced
1 clove garlic diced
2 cups water
1 teas. ground cumin
2 tbls oil
1 pkg. Mexican rice seasoning

Put the oil in a frying pan , add rice, onion, and garlic, cook on high stirring constantly until  brown. adde tomatoes, water and seasonings.
Bring to a boil, cover, lower heat to just below medium .  Cook about 20 minutes or until rice is done but not dried out.

What's "brown onion", Marilyn?  I have seen the ordinary cooking ones, red ones, white ones and vidalia and Spanish but I haven't seen brown I don't think. :-\

brown onios are look lioke the yellow ones only the skin is brown. I would use any kind of onions I just happen to have brown ones, they are swetter than the yellow or white  onions.

I guess then that these are what we call simply "cooking onions" as they all have brown skin. ;)
