Title: Tofu Creole

Tofu Creole

1 cup chopped green pepper
½ c chopped onion
1 - 15 oz. Can diced tomatoes in sauce
½ tsp. dried oregano
¼ tsp. dried basil
1/4 tsp. garlic powder
12 oz firm tofu, cut into ½-inch cubes, drained well
1 Tbsp. Grated Parmesan cheese

In a large nonstick skillet, or regular skillet lightly coated with nonstick cooking spray, combine green pepper, onion, tomato sauce, basil, oregano and garlic powder.  Cover and cook over medium heat until green pepper is tender, about 10 to 15 minutes, stirring occasionally.

Reduce heat to low and gently stir in tofu.  Heat through.

Transfer mixture to a serving bowl and sprinkle with Parmesan cheese.  Serve over  brown rice.

I have never bought Tofu.  I think the only place I have eaten it is at a Chinese restaurant in Sweet 'n' Sour...or is it..Hot 'n' Spicy soup! 

But I think I will try this sometime.

Wow, it sounds good.  I'll have to try this some time & print this & another one out on my printer & try it.  Thank's Marilyn,
