Title: Amish Friendship Bread Starter & Three Bread Recipes

Amish Friendship Bread Starter

Ingredients for Starter:

1 package active dry yeast
1 cup cup milk
1 cup flour
1 cup sugar

Procedure to make Starter:

Note: DO NOT use metal bowls or spoons and DO NOT refrigerate.

Dissolve yeast in small amount of warm water. Mix all ingredients together in an ample sized bowl or jar (it WILL grow). This is Day 1 of the starter.

Day 1: The day you receive the starter - Do nothing.
Day 2, 3, 4: Stir with wooden spoon.
Day 5: Add 1 cup each - flour, sugar, milk. Stir.
Day 6, 7, 8: Stir with wooden spoon.
Day 9: Do nothing.
Day 10: Add 1 cup each - flour, sugar, milk. Stir. Pour into 3 containers (1 cup each). Give 2 containers to friends along with this recipe. Keep 1 cup for yourself.

Note:

When giving starter away, only half fill the container and provide for some ventilation (ie. small hole in top of jar). The starter does expand and unless the gases caused by the fermenting process are allowed to escape, they will build up and could cause the lid of the container to pop off.

Store the remaining starter in a container in the refrigerator and begin the 10 day process over again when ready. You can also freeze this starter in 1 cup measures for later use. Frozen starter will take at least 3 hours at room temperature to thaw before using.



Amish Friendship Bread
Ingredients:

1 cup starter (see Starter recipe to right)
1 cup oil
2 cups flour
1 cup sugar
1/2 cup milk
1 1/4 teaspoons baking powder
3 eggs
3 teaspoons vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 cup chopped nuts (optional)

Procedure:

Preheat oven to 350 degrees. Combine all ingredients and mix well. Pour into 2 well greased and sugared loaf pans. Bake for 40-50 minutes or until done. Cool 20 minutes before removing from pans.



Amish Friendship Bread Variation I

Ingredients:

2 cups all-purpose flour
1 (6-serving size) package instant vanilla pudding mix
1 1/4 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup starter (see Starter recipe to right)
1 cup sugar
2/3 cup vegetable oil
1/4 cup milk
3 large eggs
1 teaspoon vanilla extract

Procedure:

Whisk together in a medium bowl the flour, pudding mix, baking powder, cinnamon, salt and baking soda; set aside. In large mixing bowl combine remaining ingredients, mixing well. Stir in the flour mixture, mixing only until just combined; do not over mix. Pour into two 9 x 5 x 3-inch loaf pans. Bake at 350*F (175*C) for 50 to 60 minutes. For more variations, add your favorite dried fruits, nuts and/or chocolate chips. Also experiment using different flavor pudding mixes. Makes 2 loaves.



Amish Friendship Bread Variation II

Ingredients:

2 cups all-purpose flour
1 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
1 cup Amish Friendship Bread Starter (see recipe to right)
3 eggs
2/3 cup vegetable oil
1 tablespoon vanilla extract
1 cup chopped nuts
2 apples - peeled, cored, chopped

Procedure:

Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans. Sift together flour, sugar, baking powder, cinnamon, baking soda and salt, set aside.

In a large mixing bowl, stir together the Amish Friendship
Starter, eggs, oil and vanilla. Gradually stir in the sifted ingredients, until just blended. Finally stir in the chopped nuts and apples. Divide the batter evenly between the two prepared pans.

Bake at 350 degrees for 50 minutes, or until a toothpick
inserted into the center of a loaf comes out clean. Makes 2 loaves.

I had been given this and it didn't turn out...I think I used metal to stir.

The baking directions arent here though, or did I miss something?

No, Sue.  I asked Carol if she had the Bread recipe.  We will see.   I would love to try this.

Great addition, Marilyn.  The starter for this recipe is the same as above.  I still can't figure out how you get only three cups out of 9 cups of ingredients...

Etta Sue you are only going to have 3 cups of liquid, the sugar and the flour are absorbed by the liquid.

I'm using this all the time now.

I make Butterscotch Bread with butterscotch chips and butterscotch pudding.

I make Lemon and Poppy Seed with Lemon pudding and 1/4 c. poppy seeds and 1 tsp. of lemon extract.

I make one with Trail Mix

The variations are endless.  I freeze the starter and then get it out either here or in Virginia.  I've used metal spoons and metal beater and/or whisk and it's always worked.

I have about 10 loaves in the freezer right now and I have them ready then in case unexpected company drops in.  I take them to all the church social gatherings.

2 cups advantageous flour

2 teaspoons arena cinnamon

1 cup chopped pecans

1 cup peeled, cored and chopped apple

1 cup raisins

DIRECTIONS

Preheat oven to 325 degrees F (165 degrees C). Grease three 9x5 inch loaf pans.

Place the amateur in a bowl, activity in the oil, sugar, eggs and boilerplate and mix well.

Combine the flour, baking soda, baking powder, burning pudding, and cinnamon. Add the abrade admixture to the amateur admixture and exhausted by hand. Add the pecans, raisins and apples and mix well. Pour concoction into the able pans.

Bake at 325 degrees F (165 degrees C)

I'm so happy to have this recipe and we enjoy it almost continuously in our home and I transport it to Virginia from here in Ontario!
