Mini Olive Oil Biscuits

Mini Olive Oil Biscuits

2 Cups self rising flour (not cake flour)
3/4 cup milk
1/2 cup extra-virgin olive oil

Preheat oven to 400 degrees. In a medium bowl, combine flour and a pinch of salt.  Make a well in the center and add milk and 7 tbls. Olive oil. Stir until blended. Do No overwork the dough or the biscuits will be tough.
On a lightly floured surface, roll the dough into 1/3 inch thickness. cut into 1 1/2 inch rounds with a plain or fluted cookie cutter and place on baking sheet.
Bake for 10 minutes, or until the biscuits just begin to turn golden.  Using a pastry brush, brush the tops with the remaining 1 Tbls. Olive oil. serve warm, makes about 20 biscuits.
