High Fiber Wheat Bran Muffins
2 cups bran cereal*
1 1/2 C. fat free milk
1/2 C sugar
1/4 teas. lite salt
1 1/4 C. all-purpose flour
3/4 C finely chopped walnuts
1 egg
1/4 C canola oil
Preheat oven to 400 degrees
In large bowl, combine bran cereal and milk. Stir well and set aside until cereal softens (about 5-7 minutes)
In another bowl combine all dry ingredients and the walnuts
Add egg and oil to the cereal and milk mixture, beat well
Add flour mixture and stir only until combined.
Pour batter into 12-2½" muffin pan cups coated with cooking spray
Bake 20 minutes or until lightly brown.
*All-bran "original" by Kellogs works well for this recipe. Please note that these muffins are very high fiber. Eat sparingly. store leftovers in a sealed plastic bang in the fridge. Serve warm.
You will find that most of my recipes are very health conscious. However I have posted some of my favorite "comfort" foods too. I prefer to stay with the healthy type foods though.
If this is the recipe that is on the All Bran box, this is very good. My favorite bran muffin. But, yes, eat sparingly unless you NEED to eat more. ;)

Yes, I noticed you eating such healthy foods--love this one; sounds good.
Going to make this one so my" healthy choice" relatives will eat these while I fill up on Karmet red velvet cookies (still trying to find mix).
Also going to pick up tofu and make salad like you had mentioned the other day.
See this little old italian can cook healthy foods , too!!!!.
