Potato Yeast Rolls

  I have given this recipe to only a very few close friends.

Potato Yeast Rolls

Dissolve:
        3 pkg. dry yeast in 1 c. lukewarm water
Mix in large bowl:
        1 qt. scalded milk
         2 c. mashed potatoes(no milk added)
         2 sticks margarine or butter
         1 c. sugar
Let cool to lukewarm, then add:
          yeast mixture
          6 cups plain flour
Let stand til foams up(about 20 mins.)
Add:
          2 beaten eggs
          1 Tblsp. salt
           more flour to make soft dough.  Knead, then allow to rise in warm place til doubled.  Turn out onto floured surface and roll or press to about 1/2 inch thickness.  Cut out rounds with biscuit cutter or glass and place onto greased pans.  Allow to rise again then bake in 350 degree oven until brown.  Brush tops with melted butter and enjoy!

Tip:  when adding lukewarm water to the yeast, test on inside of wrist.  If it feel really warm or cold, then it's not right - must be lukewarm(barely warm).  Also, I have good results allowing the dough(covered with dish towel) to rise in a sunny location away from drafts.

Etta Sue - the bold looks just fine.  Hope you try this recipe.  The ladies at the salad supper tonight applauded me for the rolls!    These rolls can be frozen after baking and heated before serving - don't forget to butter while hot!
