Title: Sweet and Sour Chicken

Sweet and Sour Chicken


1 large pkg. boneless, skinless chicken breast or tenderloin (thawed, and cut into pieces if desired)
1/2 cup butter
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped carrots
3/4 cup ketchup
1 cup (plus a bit more) pineapple juice
2 tbsp vinegar
1/4 cup brown sugar
1 tbsp soy sauce
1/2 tbsp garlic powder
1/2 tsp salt
1/4 tsp pepper
dash ginger

Melt butter in a skillet.  Saute onion, pepper, and carrots until kind of brown (about 5 minutes).  Add the other ingredients except chicken, and simmer 10 to 15 minutes.  Pour over the chicken that is in an ungreased baking dish and bake at 350 degrees for 45 minutes, uncovered.  Cover, and cook for 30 more minutes.  

Serve with rice, if desired.

One hint -- don't cook the chicken first, it really dries out the final dish!
