The Naked Chef's Roasted Salt Chicken with Potatoes

I made this for dinner a few nights ago. IMO, it fully rawked and tasted awesome. I didn't use an organic chicken because I thought money wise it was over priced. Also I used red potatoes instead and left the skins on. You can mess with it to make it fit your needs, but I loved it!


The Naked Chef's Roasted Salt Chicken with Potatoes 


Roasted Salt Chicken with Potatoes

Serves 4

1 (5 lb) organic chicken
Good quality sea salt
2 cloves of garlic
The zest of one lemon
Small bunch of parsley
2 tablespoons of butter
2 Lbs small potatoes -- peeled and cut in half lengthways
1 lb baby carrots
2 hands full of baby onions

Rub your chicken well with lots of good quality salt and leave in the fridge overnight before using.

Pre-heat the oven to 440 F

Brush the excess salt off the bird and pat dry with kitchen paper.
In a mortar and pestle, pound the two cloves of garlic with the grated zest of the lemon, and 2 tablespoons of butter. Loosen the skin of the chicken over the breasts -- it's sometimes easier to force a rubber spatula down between the chicken skin and the breast meat. Try not to tear the skin at any point. Use the spatula to push the butter down between the skin and the breasts and then flatten and smooth it out with your hands.

Place the chicken in a hot oven to roast.

Place the potatoes in a pan of cold salted water. Bring to the boil and drain immediately. Let the potatoes steam dry before tossing in Olive oil, salt and pepper.

After 20 minutes roasting, baste the chicken well and turn the oven down to 350F.

Put the par-boiled potatoes in the roasting tray with the chicken and return to the oven to finish roasting.

We love roasted chicken very much. Please tell me the advantage of rubbing salt over the bird overnight.   Would that not make the chicken taste too salty?  Norm has high B.P., and I try to avoid salt whenever possible.
