Mediterranean Chicken Salad Sandwiches
4 bonless skinless chicken breast halves
1 teas. dried basil leaves
1/4 teas Salt
1/4 teas black pepper
1 chopped cucumber
1/2 cup mayonnaise
1/4 cup chopped roasted red pepper
1/4 cup pitted black olive slices
1/4 cup yogurt
1/4 teas garlic powder
6 pita pockets (cut in half to make the pockets)
Lettuce leaves
Place chicken, 1/2 cup water, basil, salt and pepper in medium saucepan; bring to a boil. Reduce heat; simmer covered 10-12 minutes or until the chicken is no longer pink in center. Remove chicken from saucepan and cool. cut into 1/2 " pieces.
Combine chicken, cucumber, mayonnaise, red pepper olives, yogurt and garlic powder in meduim bowl; toss to coat well.
Lay lettuce leaves in pita pockets and fill with chicken salad mixture. You can also add sliced tomatoes, avacados, mushrooms, sprouts, anything else you like.
Serves 6
This is soooo goood and healthy too, I love to make these, My kids also loved them.

Hey everyone this is a real healthy recipe. for the Vegetarians just leave out the chicken.
