Title: Layered Salad
Post by: Etta Sue on May 17, 2003, 11:15:20 PM
Layered Salad

2C. Mayonnaise
1/4 C. Sugar
1-16oz. pkg of cut up lettuce or small head
of lettuce
10 oz. pkg of frozen green peas
1 medium onion, chopped
1 medium green pepper, chopped
3 stalks celery, chopped (or celery seed to taste)
8 oz. fancy shredded cheese
1/2 jar of Bacon Bits

Mix mayonnaise and sugar together.  Set aside.

In large bowl, put lettuce, peas, onion, green pepper and celery in layers.  Spread mayonnaise/sugar over top and seal to the edge.  Add cheese and Bacon Bits on top.  Seal bowl.  Best if made the night before.

To serve, use salad forks or tongs.  I like to mix mine first because I have a deep bowl.  This is good for pitch-in dinners.

I have used cauliflower and broccoli also in this.

I've made the layed salad for company.  Its lovely in a pretty glass bowl.  Sure makes a lot., but dosen't keep due to the mayo., so if you decide to make it., have a few people in!...LOL

- Judy..

ps - it really is delicious!

Judy, I know this doesn't look good the next day but I eat it anyway.   ;D  I did find that using Fat Free Miracle Whip and Sweet 'n' Low, that it didn't get thin like regular Miracle Whip and sugar does.

Oh, this salad stays crunchy for a couple of days - I don't remember putting sugar in the mayo.  Wonder if I used dry ranch dressing instead.  I will have to look for that recipe.  Carol

Please do, Carol.  Once this recipe is stirred up or dipped into, then the next day it is limp but still good.  Would like to know what you use to keep it crisp!
