Title: Thai Chicken Salad

Thai Chicken Salad

1/2 bottled Thai peanut stir-fry sauce
3 Tbs. fresh lime juice
2 tsp. freshly grated ginger
1/2 tsp. minced garlic
8 C. loosley packed torn romaine lettuce
2 C. shredded cooked chicken
1 1/2 C. thinly sliced English (hothouse)
           cucumber
3/4 C. shredded carrots
1/3 C chopped fresh cilantro
1/4 C. chopped fresh mint leaves
Garnish: chopped peanuts

Dressing

Whisk ingredients in a large serving bowl until well blended.
Add remaining ingredients, toss to mix and coat. Sprinkle with peanuts.

Tip:
For a different presentation, shake the dressing in a cruet, line individual salad bowls with lettuce, top with the remaining ingredents then pass the dressing at the table.

This is a really good luncheon dish if like me you are into eating a lot of salads. Sometimes this is a whole meal for me. Of course I cut it down.

I love salads.  In my teens I wouldn't eat a salad for anything but today, I get hungry for salads.  But very seldom fix a salad at home.
