Title: Great Review's Carrot Cake

I received this from a newsletter that I get & thought some of you might enjoy this, so I'm passing it onto you.

I had a luncheon today for some ladies from church.  I made carrot cake, which got rave reviews, so I wanted to share the recipe with each one of you.

Carrot Cake
1-1/2 c. oil
2 c. sugar
4 eggs
2 t. soda
2 t. baking powder
2 c. flour
2 t. cinnamon
1/2 t. salt
1 t. vanilla
1 c. chopped pecans
3 c. grated carrots (I used my blender to grate them, then I froze them until the day before I made the cake.  Also, for those who use a juicer, you can save the pulp from your carrot juice, freeze it, then use it in the cake.)

Beat together oil and sugar.  Add eggs, one at a time, beating well after each one.  Add dry ingredients and beat well.  Fold in carrots and pecans.  Pour into 3 cake pans and bake at 350 degrees until done.  (I only have 2 round cake pans, so I only made mine 2 layers.  It took 35-40 minutes for my cake to get done, but if you do 3 layers, it will likely take less time.)

Icing:
1 stick margarine
1 t. vanilla
8 oz. cream cheese
1 box powdered sugar
Cream together margarine, cream cheese, and vanilla.  Add powdered sugar and beat well.
I used 2 cans of the Duncan Hines cream cheese frosting, and couldn't tell any difference between it and the homemade frosting.  It was also MUCH easier to fix!

I promise that you will get GREAT reviews if you take this cake to a family get-together or church function!  ENJOY!

I love Carrot Cake but a long time ago I learned to use 2 Junior Baby Food Carrot jars in the place of 3 cups of grated carrots!!!  Sure is a lot easier and less messy!!!  Try it!!

It works great, Pat.  Even seems to make it more moist!!!

I like Carrot cake & I would put cream cheese in it & that makes it moist-n-delicious, too.

Ivalou's favorite cake is Carrot Cake.  Hmmmm!  Wonder if she would like some Carrot Cake for Christmas dinner....

Well, if ya haven't tried it on her already, then it's too late.

Or you could make it for the New Years Resolution, besides other things.  LOL
