Title: Marilyn's Sweet Potato Pie

Sweet Potato Pie

1 29oz can sweet potatoes
1 can of condensed milk
2 eggs
3/4 cup sugar
1 teas. Cinnamon
1/2 teas. Ginger
1 teas. Nutmeg
1 9 inch Pie Crust

Put all the ingredients in the blender and blend until smooth, pour into pie crust, there will be  about  1 cup left over that you can use for something else. Or you can use a larger Pie crust.

Bake at 425 for 15 minutes then at 350 for 45 minutes.

Remove from oven when a knife comes out fo the center clean.

Serve with a dollop of Cool Whip or Ice cream.

P.S. I forgot to tell you that this can be made with Splenda as well. For the diet conscious people. here.

Thanks, Marilyn.  I have eaten Sweet Potato Pie but I haven't seen a recipe for years....nor have I made one.  This sounds so easy since you use boughten canned sweet potatoes.
