Asparagus and Cashew Stir-Fry

Here's a recipe I'll be trying this week.  From the looks of it I already know it will be great!

Asparagus and Cashew Stir-Fry


1  1/2 pounds fresh asparagus

1  tbsp ex. virgin olive oil

2  teaspoons sesame oil

1  tbsp fresh ginger, finely chopped

1/2  cup salted cashews

1  tbsp low-sodium soya sauce

Cut the asparagus into 1-inch pieces.
Heat the oil and sesame oil, stir in the ginger and cook for one minute, add the asparagus and cook until tender. Stir in the cashews and soy sauce, cook for 1-2 minutes until heated.
Eat it. Be happy. Come onto CP and tell us if you thought it was good. :)
