West, Texas is a small town on I-35, just north of Waco.  They were founded by Czechs.   A really good bakery there offers such traditional Czech delicacies as strudel, kolaches, and  :o tamales.

Cool.  My husband was born here in Oregon but grew up in Texas.  From my experience talking with him Texas on the whole does not seem terribly multi-cultural except for TexMex and more authentic Mexican food. 

I'm not sure what I'd do without the Mexican/Thai/Vietnamese/Japanese/Chinese (very Americanized unfortunately)/Burger restaurants in our little town.  We don't have East Indian which I'd love to get too, but there are some not more than 1/2 hour away.  There is a German restaurant near where I used to live (45 minutes depending on the traffic) very Pacific Northwest restaurants within a short drive, Outback which is the pretend Aussie food ;D, and there is an Eastern European Deli near us too.  Ok, so we almost never get out to eat, generally just for anniversary, birthday, and sometimes for Valentines...but still, it is nice to know it is there!  :2funny:

There is a large Czech/Bohemian community around West, and large German communities around Fredericksburg and San Antonio.   And of course, there are the Cajun communities around Beaumont and the Gulf Coast.

All of which feature some really good ethnic cuisine.   Tex-mex rules, but there are other alternatives.

I have driven through, on the freeways, near so many neat places I would have loved to visit.  I need to make notes and determine to go back and take roads other than the freeways.
