Title: Hoppin' John Casserole

This is a microwave recipe, very easy.

Hoppin' John Casserole

4 slices bacon, diced
1 med. onion chopped
2 1/2 C. hot water
1 1/2 C. cooked black eye peas (or canned)
1 C long grain rice
1 teas. salt (or salt substitute)
1/4 teas, pepper
dash of Hot Pepper sauce

Combine bacon and onion in 2 quart casserole., Cook at High (10) 4-5 minutes, or until bacon is crisp; stir once. stir in remaining ingredients. Cook covered with lid at High (10) 5-7 minutes and at Medium-Low (7) 11-13 minutes, or until rice is tender; stir once. Let stand, covered, 5 minutes before serving.

Cute name for this dish too!... is it called "hoppin john" because its "hoppin HOT" with the hot sauce thats added? :D

It depends on how much hot sauce you add to it Judy.
