Low Fat Pumpkin Oatmeal Cookies

Low fat Pumpkin Oatmeal Cookies

1 cup packed canned pumpkin
2 egg whites well beatten
3/4 cup packed brown sugar
3/4 cup whole wherat flour
3/4 cup white flour
1 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
2 1/2 cups rolled oats
2/3 cups of dried cranberries OR 1 1/2 cups fresh

Oven 350 degrees,  coat cookie sheet with no stick spray.
In a large bown combine pumpkin and egg whites.
In another bowl combine the dry ingredients, including the cranberries.  Gently mix dry into the pumpkin mixture. Drop by spoonfulls  onto cookie sheet 2" apart.  Bake 15 minutes or until cookies seem firm.  Store in the refrigerator.

These would be good for Christmas!

Judy these look good. I've had a big bag of oats delivered this week.  I just need some Pumpkin now!  Think this is worth trying!

I heard on the news tonight that there is a Pumpkin Farmer in Lincolnshire who has a glut of Pumpkins this year.  Tomorrow they have a Pumpkin Festival in his town.....They use the Pumpkins as lights and parade through the town at night! Sounds lovely!
