Title: "Vegetarian" Taco Salad

Bernard and I are NOT vegetarians (I don't like enough veggies to be able to do that! ), but we both truly enjoy this salad, which is relatively quick and easy to make.  Some of the ingrediants are rather specific, so I am not sure of equal substitutions at this point in the UK or Canada.  sorry.

"Vegetarian" Taco Salad

1 medium onion
1 tomato
1 green pepper
2 cups shredded cheddar cheese
1 can kidney beans, drained
1 bottle small (around 8 oz.) of Katalina salad dressing
B-B-Q corn chips (fritos)

Chop/dice onion, tomato, and pepper in a large bowl.  Add the beans and cheese, and mix in the salad dressing.  Serve with corn chips (you can dip them, add them in, though they get soggy, or eat them on the side).

Sorry about the non-metric amounts.  I have a conversion chart around here somewhere that I will try to find.

This sounds like it would be good in tortilla shaped into a bowl with salsa. Maybe add a few sliced olives.
