Title: Broccoli salad

Mom and I decided we needed a broccoli salad recipe so I searched the net and found this one.  We tried it and loved it!  In fact, I think Paulette will confirm this too since we tried it out first on her family.

BROCCOLI SALAD

6   cups broccoli florets, cut into bite-sized pieces
1/2   cup golden raisins
8   slices bacon, fried crispy crumbled (I use 1/3 cup Oscar Mayer or Hormel real bacon pieces)
4    spring onions, thinly sliced (green and white parts)
1   cup pecan halves
1   cup grated parmesan cheese (optional)


DRESSING
1   cup mayonnaise or low-fat mayonnaise
1/2   cup sugar or 12packets Equal sugar substitute
2-4   tablespoons distilled vinegar
1. Mix mayonnaise, sugar and vinegar to make a dressing.
2. Place all salad ingredients in large bowl and pour dressing over them.
3. Stir to mix well.
4. Refrigerate.
5. Keeps for several days.
6. DIABETICS: When making the dressing, substitute Equal for the sugar and low-fat mayo for the regular stuff, or to suite your menu plan.
7. If needed, reduce the amount of raisins.

Angela, I have made this...it is great.  Only difference was mine called for Sunflower Seeds instead of Pecans and no Parmesan Cheese.  I have even checked out these ingredients on restaurant salad bars and used Ranch Dressing.  Great!!

Also, I put the title of the recipe in the text part and in BOLD.  Makes it easier for those who copy and paste and then save these recipes in WORD or Notepad and then print.
