Title: Curried Parsnip and Apple Soup

       Curried Parsnip and Apple Soup

1 tbsp oil
2 chopped onions
680 gram chopped  Parsnips...or frozen parsnips
1 tsp honey
2 thinly sliced apples
2 pints chicken stock
4 tbsp Balti Curry Cooking Sauce

Heat the oil in a large pan and add the onions, stir and then leave to cook over gentle heat for a couple of minutes.

Add parsnips and honey and apples, stir well for 2 minutes

Pour in stock and curry sauce...keep stirring...cover and simmer for 25-30 minutes.

I use chicken stock cubes and of course for me..No Balti sauce...Try a few tablespoons of tinned mushroom soup as a variation.

Well Jenny I will have to see if I can find some Parsnips, they aren't readily available here in the California markets, fresh or frozen. I wonder would turnips work just as well.? I can't remember what parsnips taste like.

I don't think I have ever eaten Parsnips.  That is a garnish here.

Parsnips are lovely sliced and roasted in the oven, something like roast potatoes but a sweet taste. More like swede than turnip I would say, taste-wise.  My children hate parsnips.  I used to do them in butter....Nummy

Gosh I think it's strange that Americans can't get parsnips. Don't they grow in Ohio or is it just potatoes?

Duh!  I was thinking of parsley!!!!!!  I don't even know what a parsnip is!!!!  Is it a tuber?

Etta Sue, they look like carrots but are white.  They sometimes can be substitutes cooked for bananas.

Parsnips were Jack's all time favourite veggie.  

I'm going to try this soup for sure.  It sounds so good.

Haven't had parsnips for ages., does sound good though.  Etta Sue., I bet you would know parsnips if you saw them.  Is there a site you could find on the computer and take a look?  They look like a long white carrot.
