Title: Spiffy Greens and Dressing

Spiffy Greens and Dressing  

6-8 cups dark leafy greens/spinach, or a mixture, washed, trimmed and dried
1/4-1/2 cup finely sliced red onion or green onions
Mix or Match? vegetables and fruits; Use as many different ones as you have available
1 small red bell pepper, thinly sliced
1 avocado, sliced
1/2 cup water chestnuts, sliced
1/2 cup sliced jicama
1/2 cup baby carrots, quartered lengthwise



Strawberries, thinly sliced
Blackberries, blueberries or other available berries
Pears or peaches (fresh or canned), sliced
Mango (fresh or canned), sliced
Apple slices
Orange or grapefruit sections
Pomegranate seeds



Dressing:
2 Tbsp. Rice vinegar
2 Tbsp. Fruit jam (strawberry, raspberry, blackberry, orange, apricot or pineapple)
1-2 Tbsp. Olive or canola oil
1 tsp. mustard
1 tsp. minced garlic



Mix thoroughly and pour over salad. Enjoy!

Yes, it does sound delicious.  Now if I could just find a salad bar with these items and tell them to make this dressing, which sounds lucious.  Sorry, if I had this many fruits and vegetables on hand, I would be eating salad until it would be running out of my ears.  It is so hard to shop and cook for one.

I agree to that, Etta Sue.  But I am still going to try the salad dressing if I can find all the ingredients.  I think I will double it to pour over the greens and just one of the fruits.  Uh-oh ::) I need to get some other ingredients, too.  Well.......maybe tomorrow I will go to the store. On Friday after work I hurry, hurry home to rest. :)

Actually ladies, all those fruits on the list are optional you don't have to use all of them.

Marilyn we have a bit of a problem on the site with question marks that have suddenly appeared and in erasing them from your recipe, the amounts of some of the ingredients are now gone.  Can you tell either Etta Sue or myself and we can correct it?

I'd love to try this one for sure.

The amounts to use shows up on my computer Pat.  Its only the second paragraph that dosen't list what amounts to use.  I imagine you could use whatever amount you want for yourself.
It does sound very good though, dosen't it.

Well, Judy, these don't have quantities beside them:

cup water chestnuts, sliced
cup sliced jicama
cup baby carrots, quartered lengthwise

Maybe they had a "1" beside that word "cup"
