Porcupines in Tomato Sauce

Porcupines

10 ounces ground turkey
2 ounces uncooked converted rice
1/4 cup diced onion
2 Tbls. chopped fresh parsley
1 teas. salt
1/8 teas. each marjoram and thyme leaves
dash pepper 

Sauce

1 cup tomato sauce
1/2 cup canned chicken broth
1/8 teas. minced fresh garlic

To prepare porcupines: preheat oven to 350 Degrees. In medium bowl thoroughly combine all ingredients for porcupines; shape into 8 equal balls. Spray a 1 qt. casserole with nonstick cooking spray and arrange turkey balls in casserole.

To prepare sauce and bake: In small bowl thoroughly combine all ingredients for sauce; pour over porcupines. Cover casserole and bake for 1 hour turning porcupines once during baking.

From the Weight Watchers cookbook. 4 protein exchanges 1 bread exchange. 2 1/4 veg. exchange. 331 calories, 36 g protein, 5 g. fat, 34 g carbohydrates,1,978mg. sodium, 96 mg cholesterol.

This is an excellent recipe for wieght loss... Go out into the garden on a nice sunny day, take one Butterfly net, espy butterfly amongst the flowers, give chase, after running around the garden, perspiring profusely, catch same butterfly, take inside, put butterfly on a plate, place plate in sun, have one large drink of water, and collapse!!!!!!!!! I guarantee, you wont feel like eating till the next meal, which by the way is earthworm soup!!!!!!!!!!

This is an interesting title Porcupine --  although turkey, chicken & fish are the best for dieting I have two recipes one is using canned salmon and the other is using beef so I guess any combination can be called Porcupine ------ and the WW recipe is much healthier than the ones I have.

Ha! Maureen.  Sauteed butterfly wings are delicious!!!!!!!!  NOT!!! 

Porcupine, I guess, could be anything with rice.  I think the rice is the 'porcupine' part!
