Phase 1~Sausage and Cheese Breakfast Cups

These egg muffins make a hearty breakfast that can be eaten on the run.  maike them ahead and warm them in the microwave for a fst and slimming breakfast treat.

  • 4 ounces turky sausage or crumbled turkey bacon
  • 1/2 green bell pepper, chopped
  • 1/4 onion, chopped
  • 5 large eggs
  • 1 can (12 ounces) sliced mushrooms, drained
  • 1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese

Preheat the oven to 350 F.  Coat a 6-cup nonstick muffin pan with cooking spray or line with paper baking cups.

In a medium nonstick skillet over medium high heat,  cook the sausage, pepper, and onion for 5 minutes, or until the sausage is no longer pink.  Spoon the mixture into a bowl and cool slightly.  Stir in the eggs and mushrooms.  Evenly divide the misxture among the prepared muffin cups.  Sprinkle with the cheese.

Bake for 20 minutes, or until the egg is set.

Makes 6 cups

I wonder if we can use NON-FAT Chedder Cheese?

Yes.  It is just that the Non-Fat kind doesn't melt like the real stuff does. 

This recipe sounds what I would really like.  I was wondering if you could use the egg-substitute for some of the eggs, at least!


This is one that I'm going to try for sure and I will be using the real eggs.  It's definitely decided now that eggs are almost a perfect food and they are no longer frowned on as they were when Jack had high BP and heart problems.  Amazing how these "experts" find out new things.

I'm going to go and buy some turkey sausage... 

I'll let you know how they taste.  I'm just getting a bit tired of the Veggie Quiche that are in the Phase 1

I guess it is hard to teach an old dog new tricks. 

Also wouldn't you beat the eggs before adding them to the sausage, onions and pepper?

See if you can get those tin foil muffin tin liners and then spray them with PAM.  That might work.

Just made another batch of these.

I put them this time in the little tinfoil tart containers in the muffin tins and sprayed them with PAM and they are wonderful!

I couldn't find ground turkey sausage anywhere in the store here, so I bought some regular sausage and plan to lightly fry it and then boil it to remove most the fat.  should be ok...I think.
