Quick Italian Supper

Quick Italian Supper
2 servings

2 TBLSP. canola oil
2 stalks celery diced
1 zucchini, diced
1 small clove garlic, minced
1 tomato, skinned & diced
1 tsp. basil
1 cup egg substitute
2 TBLSP. grated Parmesan cheese
Salt & pepper to taste

Preparation Method - Heat oil in skillet and brown celery and zucchini well. Add garlic in last 2 minutes. Add tomato, & simmer for 15 minutes, adding basil for last 5 minutes. Add egg substitute, Parmesan cheese, salt, & pepper.  Cover skillet, & cook slowly for about 10 minutes. Turn over for a few minutes to brown other side lightly.
