1 Med. Jalapeno Pepper toasted and peeled and destemed
3 fresh tomatoes diced
dash of salt
1 tbls. lime juice
1 small sweet brown onion diced
1 clove garlic diced
1/2 cup fresh cilantro chopped fine


If you prefer mild salsa deseed the pepper, if for med.  hot salsa leave the seeds in, for HOT salsa use 2 peppers.  Mix all ingredients in a bowl  let stand for about an hour to allow the salt to draw some of the juice from the tomatoes,and store in the fridge. Use with in 7 days.
