Title: Tofu Mayonnaise

You will be surprised at how much like real mayonnaise this tastes. It may even taste better. Yet it has 90% less fat and calories and zero cholesterol and is good for your heart.

Tofu Mayonnaise

3/4 cup tofu
2 Tbls. mild vinegar
1 teas. Dejon-style mustard
1/2 teas. tamari*
1 tbls. extra virgin olive oil

Combine first 4 ingredients in a blender and begin blenking at lowest speed. When Tofu is creamy, blend on higher speed and slowly pour oil into the mixture. Continue blending until thoroughly combined.

*Tamari is an oriental-style soy sauce made from fermented soy beans, sometimes with wheat added. Use Tamari that has been naturally fermented, unlike some commercial brands, chich are produced by chemical means. Available in some oriental food shops (where it maybe labeled soy sauce) and in health food  stores. Use sparingly because of high sodium content. Store on the shelf.

I've never been a fan of tofu, but if I ever start, I am calling you Marilyn.  

I never cease to wonder at your wealth of recipe knowledge!!!
