Post by: WinterRose on November 28, 2004, 04:16:08 PM
Mexican Cake
This is really a great tasting cake & great to share for the holidays!

Cake:

1 (20 oz.) can crushed pineapple, drained
2 c. flour
1 c. chopped nuts
2 tsp. baking soda
2 c. sugar
2 eggs

Frosting:

1 (8 oz.) pkg. cream cheese, softened
2 c. powdered sugar
1 stick margarine, softened
1 tsp. vanilla

Mix all cake ingredients together until moist and mixed well. Pour into greased 9x13 inch pan. Bake at 350 degrees for 45 minutes. Check cake after 25 minutes. Be careful not to overbake. Mix frosting ingredients together. Frost cake while still hot.

A good friend just send this to me via e mail & thought that I'd share it with everyone here ... it sounds really good to me !!
