No Bake Lemon Cheesecake

No Bake - Lemon Cheesecake

2 TBLSP. graham cracker crumbs - divided
1 package - 3 ozs. sugar free lemon gelatin
2/3 cup boiling water
1 package - 8 ozs. reduced fat cream cheese - cubed
1 cup 1% cottage cheese
2 cups reduced fat whipped topping

Coat the bottom & sides of a 9 inch pe plate with non * stick cooking spray. Sprinkle with 1 TBLSP. cracker crumbs; set aside.

In a small bowl, dissolve gelatin in boiling water; cool slightly. Pour into a blender; add cream cheese & cottage cheese. Cover & process until smooth. Transfer to a large bowl. Fold in the whip topping. Pour into prepared pie plate. Sprinkle with remaining cracker crumbs. Cover & refrigerate until set.

Yeild 8 servings
1 piece of cheesecake =

131 calories
7 grams of fat / 5 grams of saturated fat
17 mgs. cholesterol
207 mg. sodium
6 grams carbohydrates - trace of fiber
7 grams protein
