HDR stands for High Dynamic Range.

Typically when shooting with a Digital camera the internal sensor can only capture a limited "range" of colors and brightnesses.  If too many pixels are over exposed it affects many of the other pixels causing the colors in the picture to be overly bright compared to the subjects real colors.  The same goes for under exposure.  Too dark images  causes inaccuracy of the colors.

HDR is a method used to overcome this problem and increase the "range" of colors/brightness in a single image.  Its done by taking 3 or more exposures offset by a few stops (Typical Low-tone, Mid-Tone, and High-Tone) and using software (such as Photomatixs (http://www.hdrsoft.com/)) to combine the 3+ exposures into a single image.  (Also called Tone Mapping).
Its kind-of technical...but its alot of fun to toy around with.
