In case you haven't noticed most of what I eat is very health and for the most part no red meat. I use my Natural Healing Cookbook for most of my recipes.
Peanut Butter Tacos
Makes two servings
4 taco shells
6 Tbls. peanut butter (I like to use the chunky)
1/2 cup shredded lettuce leaves (I use romaine)
1/2 cup shredded zucchini
1/2 cup shredded carrots
1/2 alfalfa sprouts
1 tbls. raisins
yogurt
Heat taco shells in a moderate oven for 4-5 minutes, spread inside of each with peanut butter and fill with lettuce and other vegetables. Add raisins and top each with a dollop of yogurt.
I prefer soft tacos so I don't use the shells I used corn tortillas instead. You can hang them over the oven rack and they will warm as well as curl a little bit without breaking. I also make my own corn tortillas from time to time.
Hmmmm! I will have to think about this recipe for a bit. Peanut butter tacos sounded great until it came to the zucchini and alfalfa sprouts. I like both but never with peanut butter... :-\
Etta sue: if we put peanut burtter on celery why not on zucchini. This is very tasty and you can even add your favorite salsa be it the orange pineapple or the regular salsa.
I read this recipe thinking - peanut butter in tacos? ??? but you know, I love everything you put in them and using corn tortillas is brilliant. I will definitely try this one - now, if I can just get my husband to try them too :'(
