Stuffed Potatoes Mexican Style

It is important to find new ways to enjoy baked potaoes without slabs of butter.

Stuffed Potatoes Mexican Style

4 baking potatoes
1 1/2 cups cherry tomatoes or 2 med.
1/2 green pepper or 1 jalapeno chopped fine
3Tbls. yogurt
dash of cayenne pepper
grated pepper jack cheese

optional
chopped cilantro
diced onions
olives


Bake your potatoes either in the oven or the microwave until soft. Meanwhile chop green pepper. In a sauce pan with a few tbls., of water, steam the tomatoes and pepper until pepper is tender. Remove from heat. Stir in yogurt when tomato mixture has cooled slightly. Cut an X across the entire top of the potatoes and pull open slightly spoon tomato mixture in opening. serve Hot (if necessary put under broiler for a moment to warm) Top with grated pepper jack cheese.
