Title: Flapjacks

2oz castor sugar
2oz superfine margarine (I use Stork block or tub butter)
2 tablesp water
5 oz oats

Heat tog the sugar, marg and water until dissolved. Cool slghtly and stir in oats. Press mixture into 2 greased 7 inch sandwich tins and bake in a moderate oven for 30-35 minutes or until golden brown.
Cut into triangles, but leave flapjacks in tins for a few minutes before turning out.

I am interested in trying your Flapjacks but I am curious what is a 7 inch sandwich tin?

In our home we refer to Flapjacks as pancakes but your Flapjack I would think of as a large oatmeal cookie, which we do enjoy, in fact it is a favorite of my husband.
