Title: Lemon Cranberry Muffins

Lemon Cranberry Muffins

1 3/4 c. flour
2/3 c. sugar
1 tbsp. baking powder
3/4 tsp. salt
6 tbsp. butter
1 egg
1/2 c. milk
1 tsp. grated lemon peel
1/2 tsp. vanilla
1 c. blueberries or chopped cranberries

Preheat oven to 400 degrees.
Spray a 12 cup muffin pan with Pam.
Mix dry ingredients in a bowl.
Cut butter into dry ingredients.
In small bowl, beat milk, egg, lemon peel and vanilla.
Stir egg mixture into flour mixture just until flour is moistened.
Fold in berries.
Pour into pan.

Bake for about 20 minutes.

Heather...this sounds so delicious. 

By the way, I modified your recipe to put the title in with the recipe.  Reason?  When people copy and paste it to save or print, the title is with it!   ;)
