Title: Whipped Shortbread Cookies
Post by: Sue on June 06, 2004, 12:48:08 AM
WHIPPED SHORTBREAD COOKIES

1 lb Butter (must be butter, not margerine or shortening)
1 cup Icing Sugar (Confectioner's Sugar)
1 tsp Vanilla
3 cups All Purpose Flour
1/2 cup Cornstarch

Whip with beaters.
(I start with butter until smooth and then add each ingredient and whip well before adding next item.

Drop by teaspoon onto cookie sheet.   Lightly flatten as cookies will not spread on their own.

Bake for 15 minutes @ 350 F degrees or until edges are lightly browned.

Remove to cool.
Be careful as cookies are quite delicate and will crumble easily.

Sue, this sounds so good.  It sounds very easy too.  I am getting some stoneware cookie sheets that should work great for this recipe.
