This is a quick dinner that can go from stove to the table in one hour. I often make this when unexpected company comes by.
2, 4 or 6 boneless chicken breasts - frozen or
fresh
1 can cream of mushroom soup
1 can water
2 cloves of garlic chopped
1 medium onion chopped
2 or 3 ribs of celery sliced
pinches of oregano, basil, thyme and parsley
potatoes
carrots
Put soup plus 1 can of water in large pot
Add garlic, onions, celery and seasonings
Add chicken breasts and cover with soup mix
Turn on high and bring to boil then turn down
to simmer.
Add potato and carrot chunks
Cover and simmer for one hour
If the chicken breasts are frozen I allow 1 + 1/4 hour
While the dinner simmers you can toss a salad and make a canned fruit salad if you wish.
I always get compliments on this dinner.

That's the only way I use mushroom soup.
Your recipe sound a good variation. I certainly like the addition of herbs, not sure about garlic though. I will try it. Or perhaps I can pop over to B.C. and you can make it AGAIN!.....THAT'S A GREAT IDEA. YES?

This sounds like a great recipe, I have all the ingredients except the mushroom soup. Kay how would cream of chicken soup go in this dish.? I have some cream of chicken soup.
Cream of chicken soup works well too - just a little different flavour.

This does sound very good.
I love garlic too, and also grow my own. My husband used to have a big bed of elephant garlic, but after using it all and not getting more to plant, I switched to regular garlic. I recently dug and have plants hanging in the garage. And yes.......it's so goooood for you!
I love garlic, too. I'm going to try this for supper tonight. This sounds like something that can be done in a crock pot. Anyone tried cooking it that way?

I have all the ingredients except the cream of mushroom soup ... Like Marilyn, I think I will try it with cream of chicken soup. I also will leave out the potatoes.
I fixed this today and it is GOOOOODDD !!! I used fat-free cream of chicken soup, baby carrots, and no potatoes. mmmmmmm :P
I made this too, Jane. Followed the exact recipe and it was delicious. I also made the oven fried chicken and we had delicious leftovers for several days. I love left overs :)

Jane: How come "no potatoes"? do you not care for them? I will do this receipe too, and make mashed potatoes separately., then there will be lots of mushroom juices for a gravy to go over the potatoes.
Potatoes are my most favourite vegetable!
Oh Judy, at the time I was not eating "anything white" such as rice, potatoes, pasta, etc. It's not an issue for me any more and I do love potatoes. <Just need to limit the portion size :-\>
