Title: Parmesan Chicken

Parmesan Chicken :D

This oven fried chicken is the perfect dish to prepare in advance and take on a picnic because it tastes just as good cold as it does warm.  It's been a family favourite for years.

1 cup all-purpose flour
2 teaspoons salt
2 teaspoons paprika
1/4 teaspoon pepper
2 eggs
3 tablespoons milk
2/3 cup grated Parmesan cheese
1/3 cup dry bread crumbs
3-4 lbs cut up chicken...breasts, wings etc.

Method:

In a shallow bowl, combine the flour, salt, paprika and pepper.  In another shallow bowl, beat the eggs and milk.  In a third bowl, combine the Parmesan cheese and bread crumbs.  Coat chicken pieces with the flour mixture, dip in egg mixture, then roll in crumb mixture.

Place in well greased 15 in.x10 in.x1 in. baking pan.  Bake at 400 deg for 50 minutes or until chicken juices run clear.

Yield: 4 servings.

Hey Judy this sounds really good. I will definitely have to try this. I have never been very sucessful at frying chicken, the skin always sticks to the pan. Cooking it in the oven now that would work just fine.

Doing chicken this way., nobody would ever know it wasn't deep fried!  I am always leary of frying chicken (or anything that could cause a fire).

I am definitely going to try this one - oven fried means less fat too.  It sounds so good and our family loves parmesan cheese.  We even put it on garlic toast before broiling - MMMmmm.
