Posoli

1 pork roast cooked and cut in cubes
1 size 2 1/2 can of hominy (drained)
2 tbls powdered red New Mexico Chili
1 brown onion chopped
2 stalks celery chopped
6 cups water
salt to taste.

Put allthe indredients in to a pot and cook until onions and celery are done but still slightly crisp.

toppings
shredded lettuce
diced green onions
diced tomatoes

serve with warmed corn tortillas and let each person top with the above toppings.

More chili can be added if you like it hotter. This is a good winter soup and a staple for Mexican families.

I have heard of this but have never eaten it.  Does sound delicious on a cold day.

I made some of this today and added 4 cloves of garlic chopped.
