Potato Soup
The ingredients will surprise you!
2½ C. skim milk
2Tbsp margarine or butter
Salt and Pepper to taste
Put the above in a sauce pan and heat over medium heat until margarine is melted...do not boil. Then add the secret ingredient which is
¾ C Instant Mashed Potatoes
Mix well. If too thick, add milk...if too thin, add more Instant Mashed Potatoes.
That's it!
I learned to eat potato soup with celery seed added and more margarine. But you can add whatever you enjoy in your potato soup.
And of course, you have to have your favorite crackers with your soup!
(This is my very own recipe and I finally decided to measure the ingredients the last time I made it.)

Sounds like a super fast soup, Etta Sue! You could sprinkle grated cheese on top too. :thumbsup:
I'm making note of this one for sure!
I like the simplicity of this recipe You could even add clams and make clam chowder too.
That is, if you lived where clams are available! ;)

Sounds wonderful, Etta Sue. Tonight was almost one of those nights. There's no milk in the fridge, no bread, etc., etc.
So, I came up with something to fill the bill, but probably wasn't as good as your soup.
