Title: Spinach Avacado Grapefruit Salad

Spinach Avocado Grapefruit Salad


5 oz. fresh spinach, stemmed, washed, dried, and large leaves torn into smaller pieces.

1 tsp. olive oil

1 garlic clove, pressed or minced

1 grapefruit

1 avocado

salt and pepper to taste



In a large bowl, mix together the oil and garlic, add the spinach, and toss well. Set aside.

Peel, seed, and section the grapefruit. Halve the avocado, remove the pit, peel, and cut into 1-inch slices.

In a small bowl, gently mix together the grapefruit and avocado. Add them to the bowl of spinach. Sprinkle with salt and pepper, toss lightly, and serve immediately.

Serves 4 with 123 calories
