A recipe for those on the South Beach Diet...I found this online & thought that I'd share them with all of you so I do hope that you will enjoy these ( ETTA I hope that you will like them too ) I've some others that I'll post soon so be watching !!

Low Fat Cottage Cheese Omelet
1 serving

1/4 cup egg substitute
1/4 cup low fat cottage cheese
1/4 tsp. seasoned salt
1/2 tsp. caraway seeds
1 tsp. corn oil margarine
2 egg whites, beaten stiff

Preparation Method - 1) Mix together egg substitute, cottage cheese, salt &  caraway seeds. 2) Melt margarine in skillet. Fold cottage cheese mixture into stiff egg whites & place in skillet 3) Allow to set. Stir with fork, & repeat until desired dones.
