Sesame Pork Tenderloin
Phase 2- 2 lean pork tenderlions (about 3/4-1 pound each)
- 1/4 cup extra virgin olive oil
- 1/4 cup sesame seeds
- 1 rib celery, chopped
- 2 tablespoons chopped onion
- 1 cup whole wheat bread crumbs
- 1 teaspoon lemon juice
- 1 teaspoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/8 teaspoon ground black pepper
Preheat the oven to 325 F
Cut each tenerlion almost though lengthwise, then flatten.
Heat the oil ina large skillet over medium-high heat. Add the sesame seeds, celery, and oinin and cook, stirring frequently, for 3 minutes , or until lightly browned. Add the bread crumbs, lemon juice, Worcestershire sauce, salt, thyme, and pepper. Toss lightly. Spread the stuffing on the cut surface of 1 tenderloin. Place the second tenderlion, cut side down on top of the stuffing. Fasten the tenderloin together with kitchen string or skewers. Place in an open roasting pan.
Roast for 1 hour and 20 minutes, or until a thermometer inserted in the center registers 155 F and the juices run clear. Let stand for 10 minutes for slicing.

Have a full house up there and I know all of them will
love this.
Along with some sweet potatoes and probably a big , big
salad (fennel/anise included) and it should be very
pleasing.
Think I will add Etta's apple crisp for dessert.
