 These aren't what I'd call wild, but wasn't sure where to place them. From a registered herd near Memphis.

Very, very nice, Jim!  They used to have a place here called, "Buffalo Crossing".  It was a bison ranch and restaurant that served bison in just about any form you could imagine.  They closed about 2 years ago, sadly.  I used to really like that place.

 I've never eaten bison but figured it would be a lot like beef. Maybe darker. Never heard anyone say it "tastes like chicken".  :lol:

They didn't seem bothered by me Judy, but I was a good distance from them. Really they seemed rather docile but I didn't want to rile them. I can't run near as fast as in my youth.  ;)

Those bison may be behind a fence, but they're always wild, and it takes a real good fence to keep them in one place. I've observed them inside the National Bison Range at Moise, Montana, on numerous occasions.  They have a number of bison that they keep in a display pasture.  They'll hang out by the fence hoping to catch a person not wary of what they are capable of doing.  They're big, powerful and fast!

They are amazingly fast, and their size makes them powerful. I'm no bison expert, but I am very adept at knowing my own physical limitations.  ;)

I love bison meat.  Ever tried it with sloppy joe mix?  Yum!
